The papas aliñas are a
Andalusian recipe eaten as cover or incoming.
Ingredients:
700 grams of medium sized
fresh potatoes
120 grams of chives
1,5 litres of water
150 ml of mild olive oil
2 tablespoon of sherry
vinegar
1 and half tablespoon with
heavy salt
Recipe:
- Wash the potatoes.
- Put the potatoes in a pot and cover with water. Bring to boil when heat and add a tablespoon of salt.
- Wait 25 minutes and check with a toothpick if they are soft.
- While they cooked chop the chives and parsley.
- When they are cooked turn off the heat and away the pot from the fire. Wait 30 minutes and remove it from the water and 25-30 minutes after we leave in a colander.
- Get the potatoes, peel and cut into slices and leave them in a bowl of ceramic or glass.
- Add the chives and parsley, split the half teaspoon of salt over everything, pour the vinegar and olive oil last. Mix everything and when everything is cold serve it.
