Fish fry

It is a traditional dish of the Mediterranean coast, for example, in Málaga. The dish is recounted in several texts of Sephardic cuisine that was served along with a variety of herbs vinaigrette.

Ingredients:
2 kg of small fish (anchovies, squid, marinated dogfish, whiting, mullet and baby Squid).
Salt.
Oil.
Flour.

Preparation:
 - Clean the different types of fish and Flour each species separately. Are passed through a sieve in order to remove remaining fine flour.
- Fry in small amounts, with the oil at high temperature so that the fish not be cooked. (The anchovies are usually fried in panicles of five units).
- Served in an ample supply in separate piles.
