Atún mechado.

It is a very typical dish of Huelva's gastronomy. Tuna swim very quickly and their size could be between three and eight metres long. They can weigh between 400 and 900 kg. This fish is very appreciated by a lot of countries especially to Japan. A very typical fishing of the tuna is called "pesca de la Almadraba" it consistes that four ships put themselves making a square and the put their networks undersea and when tunas put over the network the ships pull the network on and they trap the tuna.

 ITS PREPARATION 

1. We fry the onions and the garlics maked pieces, while we are putting the spicies and the wine.
2. We put ham in the piece of tune.
3. We put the tune over the stir-fry and we let it cooked about a half an hour putting a bit of water and moving the stew.
4. We let it from the pot and we let it get cold and we cut it in slices.
5.  We make the stir-fry a sauce. It can be served in cold with the hot sauce.


INGREDIENTS

2 Kgr. of tune.
150 grs. of far.
6 garlics.
White pepper.
Salt.
A spoonful of virgin olive oil.
2 glasses of white wine.
