Salmorejo

 
INTRODUCTION
Salmorejo is a cream served habitually as the first plate; this is a typical preparation of Córdoba. Due to the employment of the bread is that of a mash or that of a sauce, is in the habit of using with pieces as other food in his surface as: shavings of ham, croutons, or with crumbs of hard-boiled egg. For the used ingredients it is a question of an economic enough food and preparation.

TELLS THE HISTORY:
     It goes back to the first instants of the humanity in which the ingredients were crushed in a couple of stones. This primitive form of cooked by mechanical crushing was very popular, and was applied to a great number of food.

INGREDIENTS:
-Crumb of bread
-Kilo and way of mature tomatoes
-1clove of garlic
-salt
-ham
- Cooked egg

PREPARATION: 
 We start by throwing the oil in the mixer, the salt, the garlic, one or two (bare) tomatoes and part of the bread that previously we had put in soaking. When on having beaten we obtain a nice color salmon, we continue adding the rest of the dipped bread and the bare tomatoes (with or without pips, to taste of everyone). To add vinegar ... it is optional, is necessary to bear the acidity of the tomato in mind. To serve in casseroles (slightly deep) and new paragraph, ham and cooked egg punctured in order that each one is served to his taste.
