Choco with beans

This recipe is typical of Andalusian cuisine but specifically in the province of Huelva

Ingredients

1'500 Kgs. cuttlefish
     * 1/2 kgr. peeled beans
     * 3 cloves of garlic
     * 2 spring onions
     * 1 cup dry white wine
     * 2 cups water
     * 1 bay leaf
     * 1/2 teaspoon cumin
     * 1 teaspoon paprika
     * 1/2 tablespoon olive oil
     * Salt



Preparation mode

Step 1: Clean the cuttlefish and cut into pieces. Bring them a little salt.

Step 2: Chop the onions very fine and sauté in a pan with oil and a little salt. Do it to a simmer.

Step 3: When the onion is poached, add the paprika and cumin. Until the sauce is ready.

Step 4: Put on a pot of beans on cuttlefish and grit.

Step 5: Pour the sauce on top, with a glass of wine and let cook for 5 minutes.

Step 6: Then add the 2 cups of water and let boil for 1 hour, or until the beans are tender and cuttlefish.

Step 7: Before finishing, add salt to taste.


Beans with cuttlefish is one of the most typical dishes having gastronomy in Huelva and is a rich dish, easy to make and fairly inexpensive, cuttlefish is a fish.
