Cotechino (a kind of spiced Italian sausage) with lentils is a typical
dish of Christmas period and, particularly, of New Year’s Eve Dinner because the tradition
says that to eat a piece of cotechino before midnight augurs well for the new year.
About its origins, we can say that it was born as a poor dish.
Peasants generally ate it with legume
and vegetable soup. Cotechino is a typical product of Emilia Romagna region and
it was prepared only and exclusively by people preparing sausages that created
an independent corporation since 1547. The first quotation about cotechino was made only after 200 years
and the firs recipe appeared the next year. The importance that cotechino has
today is due to the father of Italian cuisine , Pellegrino Artusi, who, in his
enormous work, “Science in the kitchen and the art to eat well” speaks about
“bandaged cotechino”.
