This recipe is
specific for Moldavia.
Ingredients
For 16 helpings :
For the dough you need:
500 g flour
2 eggs
200 ml of whey (milk )
50 g yeast
2 tablespoons of oil
1 tablespoon of sugar
1 vanilla sugar
1 pinch of salt
For the filling you will need:
250 g cow cheese
2 eggs
4 tablespoons of sugar
50 g raisins
1 tablespoon farina
1 tablespoon of rum
zest of one lemon
1 vanilla sugar
To anoint the pies you need:
1 egg
1 tablespoon sugar
Method
The dough :
Sieve flour and put it in a larger bowl . In a bowl mix the yeast with 2 tablespoons of sugar until it liquefies . Make a hole in the middle of the flour and pour the yeast, over which add 100 ml warm whey . Mix with a spoon and add flour until it has the consistency of a cream. Let it rise for 15 minutes in a warm place .
Blend two eggs with half a teaspoon of salt and add them to the bowl . Add the remaining warm whey and a bag of vanilla sugar . Mix well and when the dough is almost ready add the oil . Cover the dough with a towel and leave it to rise in a warm place for about an hour .
Filling:
Separate the egg yolks . Mix the yolks with a pinch of salt. Mix the egg whites with 4 tablespoons of sugar .
Rub the cheese with a fork , then add the raisins , egg yolks , vanilla , rum , lemon , a tablespoon of farina and stir until smooth . Finally, add the egg whites , being careful keep the composition homogenized.
The risen dough is divided in two . Each half is divided in turn into eight equal parts . Using a rolling pin stretch dough pieces , making sure that they are thick enough . In the middle put one tablespoon of filling and unite the opposite edges until it covers all the filling.
Place them in a greased tray (with butter) and let them rise for another 30 minutes in a warm place .
Brush them with the blended egg with sugar and bake them at medium heat about 40 minutes . During the first 10 minutes set the oven to a higher temperature (200 degrees C ) .
Remove them from the oven, brush them with sugar water and cover with a thick towel . Powder them with sugar and serve them warm .
