Sponge cake



Ingredients
 Dough :
• 5 eggs
• 14 g dry yeast ( 2 packs of Dr. Oetker )
• 250 g sugar
• 350 ml milk
• 120 g butter
• 1.1 kg flour
• 1/2 teaspoon salt
• zest


 Nut cream :
• 300 g toasted minced walnuts
• 5 tablespoons of cocoa
• 150 g sugar
• 2 whites
• rum
• 2 to 3 tablespoons of milk


 For anointing the dough:
• 1 blended white
• granulated sugar
• Helpings: 2
• Preparation time : more than 120 minutes


Method:


Dough Preparation:
I put all the ingredients for the dough in the bread machine on the dough and kneading program, during which I dealt with the cocoa filling: Mix the minced nuts with sugar, cocoa and the egg whites , then pour hot milk and mix the composition until is homogeneous.
When the dough is risen , divide it into four equal parts. Stretch it into four rectangular thick sheets, approx. 0.5 cm long depending on the form in which you bake the cake .
Fill each sheet with the nut composition and roll it. Take two rolls and braid them. You will obtain two braided cakes. Place them in the greased and flour dusted trays.
Leave the cakes in trays in a warm place for 20 - 30 minutes, during which they will double their volume.
Bake in the preheated oven at medium heat for 40 minutes. When they become brown , brush them with the blended egg white and sprinkle powdered sugar .
Let them cool and then serve them.
