Mousse au chocolat pâtissière

Ingredients:
200g cooking chocolate
4 eggs
2 sachets of vanilla sugar
1 pinch of salt
Directions:
1. In a small heavy saucepan, break the chocolate into pieces, add 1 soup spoon of water, and heat very gently, stirring.
2. Separate egg whites from yolks.
3. Pour the melted chocolate in a bowl, gradually add the 4 egg yolks spinning rapidly, then the 2 sachets of vanilla sugar.
4. Beat the egg whites until stiff with a pinch of fine salt.
5. Mix gently to the chocolate preparation, without breaking them.
6. Put in a bowl in the refrigerator 4 or 5 hours before serving.
