Recette Poire belle-Hélène

Pear Belle Hélène was created by French chef Georges Auguste Escoffier in 1864. This year, the operetta "La Belle-Hélène" was a triumph over Europe. Music composed by Offenbach, but also the voice of the singer Hortense Schneider, had captivated the public.
Georges Auguste Escoffier had the idea of poached pear and pour a hot chocolate sauce. Today, Pear Belle Hélène is eaten accompanied by a scoop of vanilla ice cream and bitter chocolate.
Ingredients
6 pears
1 lemon
200 g of sugar vanilla ice cream
100 g of dark chocolate
1 liter of water
3 cl of milk
Preparation
1. Peel the pears, keeping the whole.
2. Bring water, sugar and lemon juice to a boil.
3. Cook pears in the boiling syrup for 15-25 minutes.
4. Leave to cool in the liquid.
5. Melt the chocolate in a bain-marie and off the heat, add the milk.
6. Make the pears in a soup plate, add 2 scoops of vanilla ice cream and pour over the hot chocolate.
