Step 1: In a large enough
pot, place a layer of sliced onions. Then put a layer of meat pieces, taking
care to vary by species and tight.
Step 2: Put a layer of onions and carrot sliced. Add salt,
pepper and juniper berries. Put a layer of meat.
Step 3: Pour the gin, vinegar, white wine. Add salt, pepper,
juniper berries, thyme and bay leaf. Cover with water. Close the cooker.
Step 4: Bake at 200°C for
15 minutes to bring it up to temperature, then at 150°C for 2h30. Keep it cool
overnight.
