Steak tartare

Ingredients (for 4 people):

- 800g fresh beef fillet
- 1 egg yolk
- 2 teaspoons of mustard
- 1 tablespoon chopped onion
- 40 g of chopped capers
- 1 teaspoon Worcestershire sauce
- 2 tablespoons ketchup (optional)
- A few drops of Tabasco sauce
- Salt and pepper to taste
- 4 tablespoons olive oil
- 2 teaspoons chopped parsley
- Half lemon

Preparatory steps

1- Mix the egg yolks in a bowl with the mustard and the juice of half a lemon. Salt and pepper. Pour the olive oil in a stream, turning regularly whip like making mayonnaise .
2- Add the beef in the sauce. Mix with a fork , then add the ketchup, chopped onions , capers and chopped parsley . Take a few drops of Tabasco (try before putting more than 4 drops) .
3- Divide the steak tartare four flat patties on plates refreshed. Serve immediately . Serve with fries or salad.
