GREEK CUISINE

"Most elements of modern Greek cuisine were, of course, well known in the Aegean region since the time of classical antiquity, from the 4th and 5th centuries BC, and very few things have been added since that time. With grapes and wine, figs and honey, wheat bread and barley cakes, onions and garlic, lamb and goat, fish and shellfish, octopus and squid, Greek cuisine had already, over three or more thousand years ago, incorporated its basic ingredients and, given the simple methods which characterize the best of Greek cookery from the days of Archestratus to our times, the most ancient cuisine of Europe never lost its authenticity or its unique flavour", writes Andrew Dalby, the most renowned historian of world dietary customs today.
